soy ginger salmon

ingredients

  • 4 cloves of garlic

  • 1/4 cup of ginger, peeled and largely sliced

  • 1 cup soy sauce or tamari

  • 1/4 cup of maple syrup

  • 2 tablespoons of rice vinegar

  • dash of mirin

  • 2 tablespoons of sesame oil

  • 4 filets of salmon

  • 4 scallions, chopped

  • sesame seeds for garnish

  1. In a food processor combine all ingredients except for salmon, scallions and sesame seeds.

    Preheat oven to 400 Roast. Season salmon on both sides with salt and pepper and place in a 9 x 13 roasting pan. Pour about 1/4 cup of the marinade over the salmon (so that all the filets have the marinade over them and a little extra at the bottom of the pan), half of the chopped scallions and sesame seeds. Roast in oven for about 12-15 min.

  2. When salmon is done take out of the oven and garnish with left over scallions.

    *save the remainder of the marinade for next time you cook salmon, or use it with chicken, tofu, etc.
