benihana salad
serves 4-6
ingredients
dressing
1 medium carrot, peeled and chopped
1 clove garlic
1 small stalk celery, chopped
1/2 small onion, chopped
2 tablespoons ginger, chopped
2 tablespoons ketchup
1 1/2 teaspoons sugar
2 tablespoons soy sauce
1/2 small lemon, juiced
1/3 cup rice vinegar
1/2 cup peanut oil
salt + pepper
salad mixture
1 head of iceberg lettuce, cored and chopped
1/8 of red cabbage, thinly sliced
3 persian cucumbers, sliced
10 cherry tomatoes, cut in half
To make the dressing, blend all dressing ingredients (up until salt and pepper) together in blender, season with salt and pepper place in refrigerator for a couple of hours. Mix all the salad ingredients and place in refrigerator. Serve the salad in individual bowls with a couple spoons of dressing on top.
