simple steamed artichoke + aioli

serves 2-4

ingredients

  • 2 large artichokes, leaves trimmed, stalk peeled, and cut in half

  • 2 sprigs of thyme

  • 1 large lemon, cut in half

  • 1/2 cup mayonnaise

  • 1 heaping tablespoon grainy mustard

  • 1 garlic clove grated or crushed

  • 6 leaves basil, chopped

  • salt + pepper to taste

  1. Set a steamer basket over pot of water and bring water to a boil. Prepare the artichokes by cutting the very end off of the stem, peeling the stem, and using scissors to trim the sharp points off of the leaves. Cut the artichoke in half and rub the halved lemon all over right away to make sure that the artichoke doesn’t oxidize. Season all of the halves with salt place in steamer basket with the thyme leaves and squeeze the half of lemon you were working with all over all the chokes. Steam for 25/35 minutes and adding water if needed, until the leaves are easily picked off.

  2. While the artichokes are steaming prepare your aioli. Mix the mayonnaise, garlic, mustard, second half of lemon, basil and season with salt and pepper to taste. Serve as an appetizer or as a side.
